Banana Nut Muffin/Bread

It was gloomy out today for most of the day and we had 5 over-ripe bananas sitting on the table. Now, everyone knows that baked goodies taste best on gloomy, rainy days so I said, what the heck, lets bake today! Its been a while since I've baked. :) Felt great to bake just for fun! So here is the recipe. I originally got it from Allrecipes but I altered it to fit my needs. It make 12 yummy muffins and a loaf of bread or about 24 muffins. Hope you try it one day :)





Ingredients:
3 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
6 large bananas, mashed
1-1/2 cups white sugar
2 eggs
2/3 cup butter, melted
1 teaspoon pure vanilla extract
1 cup chopped walnuts *optional*
1/2 cup raw sugar for topping on muffins *optional*

Method:
1. Preheat oven to 350 degrees F (175 degrees C). Coat muffin pans or loaf pans with non-stick spray, or use paper liners. Sift together the dry ingrediants in a large bowl and set aside.
2. Combine wet ingrediants.
3. Make a well in the middle of the dry ingrediants and pour in wet mixture.
4. Fold in flour mixture, and mix until smooth. DO NOT OVERMIX. Scoop into muffins pans using a standard size icecream scoop. Or pour into loaf pan.
5. Add raw sugar on top for a crunch!
6. Bake in preheated oven. Bake mini muffins for 20 to 25 minutes for muffins and 30-45 minutes for loafs. Muffins/bread will spring back when lightly tapped.
